Makes 4 servings

1. Heat 1 tablespoon of vegetable oil in a saute pan, add garlic and stir. Add tomato, cook for 3 minutes, add basil, salt and pepper, and remove from pan and set aside.

2. Heat remaining oil, add onion and red bell pepper. Add mushrooms and spinach, cook for 3 minutes.

3. Add zucchini noodles and olives,  combine well, cook for 1 more minute and serve immediately
